Destemming and soft pressing, without pressing the grapes, in order to obtain only the most precious and balanced juice of our grapes, the free-run must. First fermentation in steel tanks at controlled temperatures and aging for approximately 9 months. Second fermentation in the bottle and subsequent aging for approximately 100 months on the yeasts. The remuage is done manually.
